Microgreens are young vegetable seedlings harvested just 7 to 14 days after germination, precisely as their first true leaves begin to unfurl. Far more than a decorative garnish, they capture the plant at its most vibrant stage of life, delivering intense botanical vitality in every bite.
Because all the energy needed for a full-grown plant is stored within the seedling, these miniature greens concentrate complex flavors and extraordinary nutrient densities into crisp, delicate textures.

Grown in nutrient-dense organic soil and harvested within hours of your table. Explore our core lineup of live, hand-trimmed varieties.

Mild, fresh brassica flavor packed with powerful sulforaphane antioxidants. Crisp, delicate stems with deep emerald leaves.

Zesty, peppery kick with striking purple and ruby stems. Delivers an immediate crisp crunch and gourmet restaurant flair.

Nutty, rich, and wonderfully crunchy with thick succulent stems. Substantial enough to serve as a complete standalone salad base.

Sweet, tender garden pea taste with whimsical leafy tendrils. Delicious eaten raw or quickly wilted over hot culinary creations.

Intensely sweet, chlorophyll-rich blades grown specifically for cold-press juicing and concentrated vitality shots.
Harvested right as their first true leaves emerge, microgreens hold all the initial vitality stored to fuel early plant development. Because they are picked during this rapid growth window, their vital micronutrients remain concentrated by volume rather than diluted through mature stems and water weight.
We believe in honest, straightforward farming. Microgreens are not a miracle cure: they are simply clean, freshly harvested produce that makes getting varied daily greens effortless and flavorful.

Tucked along the rolling hills of Madison County, Bleau Valley began with a modest intention: to grow the most vibrant, nutrient-dense microgreens possible and deliver them straight into the hands of our neighbors. In this quiet corner of the Ozarks, clean well water, pure mountain air, and careful attention shape everything we cultivate.
We believe good food should never travel thousands of miles or sit in cold storage for weeks. By farming locally in small, carefully managed batches, we preserve the delicate enzymes, bold flavors, and living vitality of every harvest. When you bring our greens to your kitchen, you are tasting honest Ozark soil stewardship.
"Farming here isn't just about output. It is about honoring the rhythm of the valley and providing our community with food that was growing just hours before dinner."

Everything you need to know about caring for, preparing, and savoring our farm-fresh microgreens from market to table.
Sprouts are germinated seeds grown entirely in water for 3 to 5 days, where you consume the seed, root, and shoot. Microgreens grow in organic soil with natural light for 10 to 21 days until their first true leaves develop. They are harvested above the root line, offering concentrated flavor, crisp texture, and significantly higher safety profiles.
Keep your microgreens refrigerated between 36°F and 40°F in their original breathable container. To maximize freshness, place a clean dry paper towel inside the lid to absorb excess condensation, and avoid storing them in damp vegetable crisper drawers.
Our microgreens are grown in clean indoor environments and harvested with pristine care above the soil line, so washing is optional. If you prefer to rinse them, do so gently under cold water immediately before serving and pat thoroughly dry with a paper towel. Never wash before refrigerating, as trapped moisture speeds wilting.
When kept cold and dry in your refrigerator, our microgreens consistently stay fresh, crisp, and nutrient-dense for 10 to 14 days from harvest. Hardier varieties like sunflower and pea shoots often maintain peak crunch for over two weeks.
Microgreens require zero cooking! Add a generous handful to morning avocado toast, fold them into warm omelets, layer them into sandwiches and burgers, blend them into smoothies, or crown grilled meats and soups right before plating.
Because of their delicate cellular structure and high water content, freezing microgreens will compromise their signature crisp texture. We recommend enjoying them fresh for raw toppings and salads, though excess greens can be blended into frozen pesto cubes or nutrient-packed green smoothies.
